1. We will choose the weat to make bread and first we will mill it with my stone mill.
2. After adding yeast, water and flour we will make a nice smelling dough.
3. Waiting the yeast to act, we will take a little walk to the weat fields wich are 300 mt far from my kitchen.
4. We will heat the avon and bake our whole grain home made organic bread!
5. We will eat our warmTuscan Schiacciata Bread!
Other things to note
You can reach my farm with your car or with the train arriving to Calenzano rail station, where I can pick you up and bring you back after the workshop. Podere Montisi farm is 3 km from rail station.

I am an organic seed saver farmer next to Florence in a real tipical Tuscan paradise. I started growing heritage grains from Tuscany and Syria, olives and Tuscan herbs and capers. I bake sourdough farmers bread following the ancient method of my family and will be verypleased to share my passion. A little authentic joyfull meeting sorrounded by rolling hills of olive groves. A good start to increase a healthy home made food attitude you can carry home.

A Bárbara é incrível! Estar na companhia dela e do Byron ( o Bernese lindo dela) fez meu dia ter válido por toda a viagem! Fazer pães com farinha antiga foi excepcional pois era um sonho antigo meu! Acredito que o mais belo da culinária é acolher é unir as pessoas ao redor da mesa e foi exatamente oq senti na casa da Bárbara! Foi o ponto alto de toda a minha viagem a Toscana!

Barbara is a lovely, warm woman who introduced us to the whole process of making healthy bread of ancient grains. We went through the process from the wheat growing in the field, the milling, the care of the natural yeast, the mixing, the baking, all the way to serving and eating the bread. We had a senses-stimulating time in Barbara’s bright, well equipped kitchen overlooking green fields of Tuscany. We learnt about health characteristics of ancient grains and discussed more generally some of the problems with modern agriculture.
